With their purple exterior and white spongy interior, similar to squash and zucchin, they have a vegetative bitterness but soaks up the flavors of what its being cooked with. When cooked its spongy texture becomes creamy. Usually considered as a vegetable but is actually a fruit. They also can come in red, green and black. Being a nutrient-dense food, they’re filled with Vitamin C and K, potassium, magnesium and fiber. It has antioxidants, reduces the risk of heart disease, helps with controling blood sugar, weight loss and fights cancer.
